A typical Charcuterie. I enjoyed the Jamon Serrano and Jamon Iberico. The Serrano comes from the white pigs from the Sierra or mountains. The Iberico are special black hoofed pigs that rummage around for fallen acorns from the oak trees; they are allowed to roam free and are happy pigs. If you order a ham and cheese sandwich it is common to see the preparer carve the jam from the leg.
